Tasting Note
Deep purple; concentrated blackberry and plum compote with violet, licorice and dark chocolate notes. Full-bodied, velvety texture, ripe chewy tannins and a long opulent fruity finish.
Food Pairing
Western: Stilton, Roquefort, mature blue cheeses, high-cacao dark chocolate, braised game, steak with blue-cheese sauce. Asian: hoisin-glazed duck (Peking duck), char siu, rich red-braised pork, black sesame dessert, sweet red-bean or sticky rice desserts.
Production Method
Traditional Vintage Port: hand/lagar fermentation, fortified with neutral grape spirit to arrest fermentation, short cask ageing then bottled to mature long-term in bottle.
