Tasting Note
Dense black-fruit core of plum, blackberry and black cherry with cocoa, tobacco, cedar and subtle spice. Full-bodied, velvety texture, ripe tannins and long, savory finish.

Western: roast lamb, braised short ribs, beef tenderloin, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), beef rendang, rich soy-based braises.
Production Method
Hand-harvested, meticulous intra-plot sorting; vinified in oak, stainless steel and small concrete tanks; aged ~16 months in 40% new French oak.
