Tasting Note
Honeyed apricot, candied orange peel, marmalade, beeswax and toasted almond with underlying citrus zest and warm spice. Rich, silky sweetness balanced by bright acidity and a long, nutty finish.

Western: foie gras, blue cheeses (Roquefort), fruit tarts, crème brûlée, roasted poultry with apricot glaze. Asian: Peking duck, rich/dishy Cantonese roast, spicy Thai curries, dim sum (har gow), sweet-and-sour dishes.
Production Method
Multiple hand-harvest passes to pick botrytised grapes (noble rot), fermented in temperature-controlled vats and matured 12–36 months in French oak barrels.
