Tasting Note

Honeyed apricot, orange marmalade and pineapple framed by botrytis-driven acacia honey, dried fig and almond; very rich and viscous yet lifted by bright acidity and a long, honeyed, saffron-tinged finish.

Western: foie gras, roasted duck, blue cheese (Roquefort), fruit tarts, almond cake. Asian: Peking duck, Cantonese roasted pork, mildly spicy Thai curry, rich sushi (uni), char siu.


Production Method

Successive hand-harvest passes to select botrytised grapes, slow pressing, fermentation in small vats and extended oak aging (typically 18–36 months, with a portion of new oak).
