Tasting Note

Deep amber; honeyed apricot, marmalade, orange peel, caramel, toasted nuts, tobacco and dried tea leaves; lush sweetness balanced by vibrant acidity and a long, savory oxidative finish.

Western: foie gras, Roquefort or blue cheeses, crème brûlée, tarte Tatin. Asian: Peking duck, Cantonese roast pork (char siu), mango sticky rice, mildly spiced Thai curry (contrast with sweetness).


Production Method

Hand-harvested in successive botrytised picks (Noble Rot), slow pressing, fermented and aged in oak barrels, long maturation; older bottles show oxidative development.
