Tasting Note
Deep ruby with black pepper, blackcurrant, sour cherry, dried flowers, balsamic, cocoa and leather. Vivid, grippy palate with tight, well‑integrated tannins and a long, savory finish.

Food Pairing
Roast lamb, braised beef, venison, grilled ribeye; Western-style stews and aged cheeses. Asian pairings: Korean BBQ (bulgogi), Sichuan beef, char siu, teriyaki beef, Japanese yakiniku, rich mushroom hotpot.

Production Method
18 days skin contact fermentation; matured ~16 months in small French oak barrels (barriques); bottle-aged before release.
