Tasting Note

Pale gold; bright tropical and stone-fruit notes (guava, apricot) with beeswax, preserved lemon and saline-mineral finish. Medium-bodied with racy acidity and a slightly honeyed, nutty thread on the finish.


Food Pairing

Western: oysters, grilled sea bass, roast chicken, goat cheeses. Asian: sushi/sashimi, tempura, Vietnamese spring rolls, mildly spiced Thai or Chinese fish dishes.


Production Method

Hand-harvested; fermented mainly in stainless steel with a portion vinified/aged in oak; aged on fine lees to add texture and complexity.
