Tasting Note
Bright lime, green apple, white blossom, flinty/mineral notes with hints of clover honey and citrus oil. High-energy acidity, delicate texture and a very long, refined finish.

Food Pairing
Oysters, ceviche, grilled fish, roast pork belly, goat cheese; sushi/sashimi, Thai green curry, spicy Szechuan dishes, Vietnamese spring rolls.

Production Method
Hand-harvested; whole-bunch pressing, settled then slow indigenous-yeast fermentation to near-dry; rested on fine lees before bottling.
