Tasting Note
Crisp, mineral-driven Chardonnay with lemon peel, Asian pear and white peach, flint and saline notes. Subtle brioche and baked-pastry texture, tight acidity, fine phenolic grip and a long, chalky finish.
Food Pairing
Western: oysters, scallops, grilled sea bass, roast chicken with lemon butter, creamy pasta. Asian: sashimi/sushi, miso‑glazed black cod, steamed fish with ginger & scallions, tempura, lightly spiced Thai/Chinese fish dishes.
Production Method
Biodynamically grown fruit; whole-bunch pressed and gravity-fed to French oak. Fermented with indigenous yeasts and wild malolactic; ~10% new oak, ~11 months on lees and extended barrel ageing (~13 months). Minimal intervention, bottled under screwcap.
