Tasting Note
Citrus and white-peach fruit with elderflower, crushed stone and oyster-shell minerality. Subtle brioche and toasted-nut notes, bright acidity, silky texture and a saline, lingering finish.
Food Pairing
Western: lobster bisque risotto, grilled lobster or scallops, roast chicken with lemon, creamy seafood pasta. Asian: sushi/sashimi, miso-marinated black cod, tempura prawns, lightly spiced Thai fish curry.
Production Method
Biodynamic estate fruit, hand-harvested, whole-bunch pressed. Wild-yeast fermentation in French oak (mostly seasoned, ~5% new), indigenous malolactic, 11–13 months on lees. Bottled unfined/unfiltered under screw cap.
