Tasting Note
Lemon and white peach with toasted hazelnut, brioche and saline/mineral notes. Bright, juicy acidity, chalky texture and subtle oak lift; creamy mid-palate and a long, precise finish.

Western: roast chicken, creamy mushroom risotto, crab cakes, lobster or scallops, pork belly. Asian: miso-glazed black cod, sushi (fatty tuna), tempura, Cantonese roast pork, milder Thai green curry.
Production Method
Hand-harvested from biodynamic vineyards; indigenous yeast fermentation; full malolactic; 11 months on full lees in French oak (c.5–10% new); minimal intervention; bottled under screwcap.
