Tasting Note
Lifted floral notes of rose petal and violet with red cherry, strawberry and orange peel. Bright acidity, fine mineral tannins, herbal/spice notes (cola, cardamom) and a long, savory finish.
Food Pairing
Western: roast duck, mushroom risotto, lamb rack, pork tenderloin, grilled salmon. Asian: Peking duck, miso-glazed salmon, shiitake soba, char siu pork, teriyaki chicken.
Production Method
Biodynamically grown; spontaneous/native yeast ferments with ~25% whole-bunch. Long maceration, pressed to French oak (16 months; ~25% new). Unfined and unfiltered.
