Tasting Note
Perfumed red cherry and raspberry with pomegranate, violets, Indian spice and a savory, earthy undercurrent. Fine, structured tannins, bright acidity and a concentrated core give energy and a long, tense finish.
Food Pairing
Roast duck, pan-roast pork tenderloin, lamb shoulder, mushroom risotto; Asian: Peking duck, char siu pork, miso-glazed eggplant, teriyaki salmon, mushroom hot pot.
Production Method
Biodynamically farmed, hand-harvested fruit; partial whole-cluster fermentation (~20%), wild-yeast, minimal intervention. Aged ~16 months in French oak (c.25% new); bottled under screwcap with no fining or filtration.

Established 1991 on Felton Road in Bannockburn. Estate-owned Calvert single-vineyard; converted to organic then biodynamic (Demeter). Winemaker Blair Walter; globally renowned Central Otago producer.
