Food Pairing
Roast duck, lamb (roast or ragu), mushroom risotto, aged cheddar; Asian: char siu or pork belly, miso-glazed salmon, teriyaki duck, shiitake stir-fry.
Production Method
Hand-harvested biodynamic fruit; gravity-fed gentle destemming; native-yeast fermentation with ~25% whole clusters; moderate maceration; 13 months in French oak (c.25–30% new); unfined/unfiltered.
