Tasting Note
Medium-bodied, off-dry Riesling with nectarine, apricot, white-peach, petrol/flint and fresh ginger; creamy texture, bright acidity and seamless sweetness; tight, long finish.
Food Pairing
Western: roast pork, glazed ham, apricot-glazed chicken, blue cheese, foie gras. Asian: Thai green curry, Szechuan/spicy stir-fry, char siu/pork belly, tempura and sushi.
Production Method
Hand‑harvested, whole‑bunch pressed; juice settled 5 days, 4‑week indigenous yeast fermentation stopped by chilling to retain residual sugar (52 g/L); rested on fine lees, minimal processing; biodynamic farming.
