Tasting Note
Apple, tangerine and wet-stone minerality with subtle exotic florals. Noticeable sweetness framed by bright, dancing acidity and saline schist-driven minerality; low alcohol gives an energetic, poised finish.

Food Pairing
Western: foie gras, blue cheese, roast pork belly, smoked salmon. Asian: spicy Thai green curry, Szechuan dishes, Chinese roast pork, sushi/seafood with citrus-based sauces.

Production Method
Estate biodynamic viticulture; hand-harvested, whole-bunch pressed, settled, fermented with indigenous yeasts; fermentation stopped by chilling to retain ~50 g/L RS; minimal intervention, unfined/unfiltered.
