Golden-copper hue. Intense aromas of dried apricot, peach, honey, toasted almond and pineapple. Silky, viscous palate with caramel, marmalade and nutty notes, balanced by lively acidity and a long, spicy finish.
Food Pairing
Western: cantucci/almond biscotti, panna cotta, fruit tarts, foie gras, blue cheese, aged nutty cheeses. Asian: mango sticky rice, Chinese almond cookies, sesame balls, sweet red‑bean desserts, matcha sweets, coconut‑based Thai desserts.
Production Method
Hand‑harvested clusters are air‑dried on mats until Jan–Feb, pressed and fermented, then aged ~7 years in small (100L) oak caratelli with the 'mother' before bottle ageing.
