Tasting Note
Straw-yellow with tropical fruit, peach, vanilla and spice. Full, slightly creamy palate with ripe apple, lemon peel and a lingering, nutty, buttery finish (balanced oak).

Food Pairing
Grilled/poached fish, shellfish (scallops, lobster), roasted chicken, creamy pasta (alfredo), mushroom risotto; Asian: salmon sushi, tempura, mild Thai green curry, miso-glazed cod.

Production Method
Hand-harvested, soft-pressed; cold-settled then fermented and matured ~12 months in 225L French oak barrels with daily bâtonnage; bottled after rest.
