Tasting Note
Rich Sangiovese character: ripe cherry, wild plum, tobacco leaf, dried herbs, mineral and subtle cedar spice; refined, dust-like tannins, bright acidity and a long, savory finish.
Food Pairing
Western: Bistecca alla Fiorentina, grilled ribeye, roast lamb, beef ragu, aged pecorino/parmesan. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu, umami mushroom stir-fries, hearty ramen with pork.
Production Method
Hand-harvested Sangiovese; destemmed/crushed, fermented at 28–30°C in stainless-steel vats with 16–20 day maceration; malolactic conversion followed by 18–22 months in new and first-use French barriques, then bottle aging.
