Tasting Note
Dark cherry and plum with violet, licorice, tobacco and savory herbs; earthy minerality, cinnamon/clove spice, fine grainy tannins and lively acidity; medium-full with a persistent finish.
Food Pairing
Western: Bistecca alla Fiorentina, grilled lamb, osso buco, tomato-based pasta ragù, aged Pecorino or Parmigiano. Asian: Peking duck, char siu pork, Korean BBQ (bulgogi), umami-rich Szechuan beef, teriyaki beef with shiitake mushrooms.
Production Method
Destemmed and fermented in stainless steel (14–16 days at ~28–30°C); aged 12–16 months in medium Slavonian oak and second/third-use French barriques, blended, bottled and rested months before release.
