Tasting Note
Bright cherry and red-berry fruit with dried violet, oregano and baking spice; savory tomato-leaf and cocoa undertones, mineral earthiness, fine-grained tannins and vibrant acidity with a long, mineral-laced finish.

Food Pairing
Western: pasta Bolognese, grilled lamb, roast pork, aged Pecorino; Asian: Peking duck, char siu, Korean bulgogi, soy/mushroom-glazed stir-fries.

Production Method
Hand-harvested Sangiovese; de-stemmed, fermented in stainless steel at 28–30°C with programmed punchdowns; 12–15 day maceration; ~12 months maturation in Slavonian and used oak, bottle-aged briefly.

Fattoria di Fèlsina (Poggiali family) in Castelnuovo Berardenga; vineyards on 320–420m southwest-facing slopes in alberese/galestro soils; estate practices include organic certification and selection from older vine material.
