Tasting Note
Bright citrus, green apple and pear with apricot and brioche/yeast notes; delicate floral and mineral hints. Crisp acidity, fine mousse and a long saline, toasty finish.

Food Pairing
Oysters, smoked salmon, seafood pasta, roast chicken; sushi/sashimi, tempura, light Thai or Vietnamese seafood, fried chicken (karaage), salads with citrus vinaigrette.

Production Method
Metodo Classico (traditional bottle fermentation); 20–24+ months lees ageing; Extra Brut (very low dosage) with minimal SO2.

Vineyard Info
Small family estate on Mount Orfano in Franciacorta. Faccoli (Claudio/Francesca) farms ~5–11 ha of old-vine Chardonnay, Pinot Blanc and Pinot Noir on calcareous soils.
