Tasting Note
Deep ruby; aromas of black cherry, blackberry, violet, spice and forest floor. Velvety, structured palate with fine tannins, balanced acidity and a long, savory finish.

Western: roast lamb, beef ribs, venison, mushroom risotto, aged Comté and hard cheeses. Asian: Peking duck, char siu (barbecue pork), Korean BBQ beef, braised short ribs (galbi), miso aubergine and mushroom hot pot.
Production Method
Old-vine Pinot Noir; gentle extraction (chapeau immergé), partial whole-cluster fermentation and 12–18 months in French oak with a moderate proportion of new barrels. Domaine in conversion to organic viticulture.
