Tasting Note

Bright red fruits (raspberry, cherry, pomegranate), wet-stone minerality and saline edge, white pepper and subtle licorice; lively acidity, textured yet approachable with soft tannins and a refreshing finish.

Western: pizza, tomato-based pasta, roasted pork, charcuterie, grilled salmon, mushroom risotto. Asian: teriyaki chicken, yakitori, Korean BBQ, mild Sichuan or Thai dishes, pork gyoza, tuna sushi.


Production Method

Organic/biodynamic, hand-harvested; indigenous “pied-de-cuve” fermentation with ~30 days skin contact; aged in large neutral epoxy/cement tanks; bottled unfined/unfiltered with minimal SO2.

Frank Cornelissen, Belgian-born winemaker on Mount Etna; farms c.19–24 ha biodynamically with a low-intervention, natural-wine philosophy. Susucaru is his entry-level field blend from younger/varied contrade.
