Tasting Note
Bright cherry-pink, scented red berries, pomegranate and citrus, with saline volcanic minerality, light tannic bite and a savory, refreshing finish (juicy yet structured).

Food Pairing
Grilled seafood, roasted chicken, salads, antipasti, light pasta (western); sushi/sashimi, grilled fish, spicy Thai or Sichuan dishes, Korean BBQ, roasted vegetable and eggplant caponata (asian included).

Production Method
Light destem/press, ~10 days skin contact, spontaneous (indigenous) fermentation, full malolactic, aged several months in neutral/fibreglass tanks; minimal/no additives.
