Delicate red-cherry and raspberry fruit with lavender, wild herb and volcanic/mineral lift. Silky texture, fine tannins and bright acidity deliver an elegant, savory finish with lingering floral and saline notes.
Food Pairing
Western: roast lamb, venison, pork shoulder, mushroom risotto, aged pecorino. Asian: char siu or Cantonese roast pork, Korean BBQ (bulgogi), miso-glazed aubergine, grilled teriyaki beef.
Production Method
Organic/biodynamic, native-yeast fermentation, ~50–60 days skin maceration, aged in large neutral epoxy tanks, bottled unfined/unfiltered with minimal or no added SO2.
Vineyard Info
Produced by Frank Cornelissen on Mount Etna; low-intervention pioneer since early 2000s, farming old Nerello Mascalese vines on volcanic soils in Feudo di Mezzo cru.
