Tasting Note
Elegant, medium-bodied Nerello Mascalese: bright cherry and pomegranate, dried rose and herbs, volcanic ash/minerality, light spice and cocoa; fine, sandy tannins and a persistent, saline finish.
Food Pairing
Western: roast lamb, grilled pork, mushroom risotto, aged pecorino, tomato-based pasta, wood-fired pizza. Asian: miso-glazed fish or aubergine, Korean bulgogi or BBQ pork, Peking duck, milder Sichuan dishes.
Production Method
Hand-harvested fruit from Feudo di Mezzo; indigenous-yeast fermentation with extended skin contact (~6–8 weeks); minimal-intervention, low/near-zero added sulfur; aged in neutral vessels (steel/amphora).
