Fresh red and black cherry, raspberry, wild herbs, rose stem, anise and volcanic mineral smoke; firm tannins, bright acidity and a long, savory finish with subtle spice and earthy undergrowth.

Hand-harvested, light destemming and crushing; native-yeast fermentation with extended skin contact (~50–60 days); aged in large neutral tanks/epoxy and occasional amphora; minimal added SO2, coarse filtration, bottled unfined.
