Tasting Note

Translucent ruby with red cherry, wild strawberry, dried herbs, lavender, volcanic dust and orange zest. Bright acidity, fine-grained tannins, saline minerality and a long citrus-tinged finish.


Food Pairing

Western: roast chicken, lamb ragu, mushroom risotto, aged pecorino or manchego. Asian: miso-glazed salmon, yakitori, Korean BBQ (grilled beef), char siu, grilled shiitake with soy-mirin.


Production Method

100% Nerello Mascalese; spontaneous/native-yeast fermentation with ~50 days skin contact, aged ~18 months in neutral fiberglass/epoxy tanks, minimal intervention, bottled unfiltered with little or no added sulphur.
