Tasting Note

Orange-tinged white: citrus and orange zest, quince and dried apricot, saline/sea-spray minerality, light honey and floral notes, fine tannic grip from short skin contact, bright acidity and a long mineral finish.


Food Pairing

Western: grilled/roasted white fish (sea bass), shellfish, roast chicken, creamy cheeses, pork with herbs. Asian: sashimi, miso-glazed fish (black cod), tempura, yuzu-marinated seafood, mild Thai or Vietnamese dishes.


Production Method

Destemmed and lightly crushed; 3–4 day skin maceration with indigenous yeasts; aged ~16 months in large neutral (epoxy/neutral) tanks; minimal intervention, often bottled unfined/low SO2.

Produced by Frank Cornelissen (est. 2001); ~24 ha farmed organically/biodynamically on Mt Etna's northern contradas (Calderara, Crasà, Picciolo); older bush-trained vines giving volcanic expression.
