Tasting Note
Blackcurrant and dark plum with chocolate-mint, cedar and vanilla oak; medium–full body, ripe fruit, fine dusty tannins and a toasty, persistent finish.

Food Pairing
Western: roast lamb, grilled steak, beef short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), char siu, Peking duck, Sichuan-style beef, teriyaki beef.

Production Method
Traditional red vinification: destemmed/fermented on skins, pressed and matured in French oak to integrate tannin and oak flavours (estimated maturation ~9–14 months).
