Tasting Note
Cherry and raspberry core with rose and violet florals, herbal and truffle notes, sweet spice and cedar. Fresh, saline acidity, fine chalky tannins and a deep, persistent finish.

Western: roast duck, mushroom risotto, pork tenderloin, grilled salmon. Asian: Peking duck or duck bao, miso-glazed cod, char siu pork, teriyaki salmon, mushroom ramen.

Production Method
Hand-harvested; ~15% whole-cluster fermentation with native yeasts after cold maceration; extended maceration; aged ~12 months in French oak (≈25% new).
