Tasting Note
Fresh and precise: sour cherry, wild red/blue berries, lavender, rose petal, subtle spice and saline/mineral tile notes. Chalky, fine tannins, silky texture and a long, tense finish.

Food Pairing
Western: roasted duck, mushroom risotto, roast pork or chicken, grilled salmon; Asian: miso-glazed salmon, teriyaki tuna, char siu, mushroom ramen, Korean BBQ (pork or beef).

Production Method
Vines on slate-rich soils; native-yeast fermentation with ~10% whole clusters (2021), 12 months in French oak barrels (45% new); gentle extraction and minimal intervention.
