Tasting Note
Mineral-driven, precise Chardonnay with lime, green apple, pear, white flowers and marzipan. Vibrant saline acidity, light creaminess and integrated vanilla/oak; chiseled, tense structure and a long, mineral finish.

Western: seared scallops, grilled lobster, roast chicken with herbs, creamy mushroom pasta. Asian: sushi/sashimi, steamed fish with ginger & scallions, miso-glazed cod, Cantonese steamed seafood.

Production Method
100% whole-cluster pressing; cold-settled juice fermented with indigenous yeasts in 400L French oak; ~40% malolactic conversion; aged 12 months in French oak (30% new).
