Tasting Note
Deep ruby with concentrated blackcurrant, black cherry and blueberry, violet florals, cedar, cocoa and vanilla. Full-bodied with ripe, fine-grained tannins, vibrant acidity and a long, toasty oak finish.

Western: grilled ribeye, roast lamb, braised short ribs, venison, aged hard cheeses. Asian: Korean BBQ (bulgogi), Peking duck, char siu, Sichuan-style beef, teriyaki beef or mushroom hotpot.

Production Method
Hand-harvested; small-batch stainless steel fermentation with pump-overs, 9–35 days maceration; malolactic fermentation in barrel; aged ~22 months in French oak (≈65% new).
