Tasting Note
Black and red berry core (blackberry, raspberry) with violet, wild herbs, pepper and a hint of almond; juicy acidity, super-fine tannins and a long, savory finish.

Food Pairing
Western: roast lamb, grilled pork, mushroom risotto, aged hard cheese. Asian: Korean BBQ (galbi/bulgogi), char siu or teriyaki pork/beef, miso‑glazed aubergine, yakitori.

Production Method
Whole-bunch fermentation (pied de cuve), matured ~12 months in used Burgundy barrels then further élevage in stainless steel; minimal new oak influence.
