Tasting Note

Aromatic junmai daiginjo with crisp apple and pear aromas, light pear flavors, gentle vanilla-cream note and a clean, dry finish.

Sushi, sashimi, tempura, grilled white fish; roasted chicken, creamy mozzarella or seafood pasta; Asian: yakitori, lightly seasoned nabemono, miso-glazed fish.


Production Method

Junmai Daiginjo: brewed from Yamadanishiki rice, polished to ~40%, cold fermentation and traditional koji process; pasteurized and bottled for aromatic clarity.
