Tasting Note

Delicate, floral Junmai Daiginjo with notes of melon, pear and white flower; silky, clean mouthfeel and a gentle, fruity finish with light umami.


Food Pairing

Sushi and sashimi, tempura, steamed white fish, grilled vegetables, chicken teriyaki, mild cheeses (Brie, Camembert), salads with citrus dressing, Asian seafood hotpots.


Production Method

Junmai Daiginjo made from Yamada Nishiki polished to ~40%; slow cool fermentation (~40 days), no added alcohol, cold-pressed and chilled before bottling.

Hazama Shuzo (Enasan) is a family brewery in Nakatsugawa, Gifu, founded in the Edo period; uses Mount Ena spring water and focuses on pure, food-friendly junmai expressions.
