Tasting Note
Vibrant cassis, blackberry and dark chocolate with cinnamon, clove, cedar and forest-floor notes. Fine, grainy tannins, balanced acidity and long, minerally finish—generous yet refined.

Food Pairing
Grilled lamb, ribeye or beef Wellington; aged cheddar or hard cheeses; mushroom risotto. Asian: Korean BBQ beef, char siu pork, hoisin-roasted duck, braised beef short ribs, or spicy Sichuan beef.

Production Method
Estate-grown fruit; some Shiraz barrel-fermented. Matured ~20 months in new and seasoned French puncheons; blended from best parcels before bottling.
