Dense black and blue fruits, mulled plum, dark chocolate, anise and cedar with toasted spice and forest-floor undertones; plush, rich palate with integrated oak and a long savory finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef stew, aged cheddar. Asian: Korean BBQ (galbi), char siu or Cantonese roast pork, Sichuan beef, miso-glazed dishes, rich Japanese wagyu.
Production Method
Hand-harvested old-vine fruit; small-parcel open fermentations (7–14 days) with pump-overs, malolactic fermentation, then 18–30 months in new and seasoned French and American oak puncheons.
