Tasting Note
Bright red and black‑currant fruit with black cherry, cocoa, cedar and graphite notes. Medium‑full, vivid mouthfeel with polished yet firm tannins, fresh acidity and a mineral, slightly savory finish.

Western: roast lamb, grilled rib‑eye, beef stew, mushroom risotto. Asian: Korean BBQ (bulgogi), soy‑braised short ribs, Peking duck, char siu, spicy Sichuan beef.

Production Method
Hand‑harvested; temperature‑controlled fermentations; ~2/3 malolactic in vats and 1/3 in barrels; aged 12 months in one‑year‑old French oak barrels.
