Tasting Note
Medium-full Pauillac: blackcurrant and damson plum with graphite/lead-pencil, violet florals, tobacco, cedar and saline minerality. Firm, chewy tannins, fresh acidity and a long, savory finish.

Food Pairing
Grilled ribeye or beef short ribs, roast lamb, duck confit, beef bourguignon; Asian: Korean BBQ (galbi), Cantonese roasted pork (char siu), braised beef with soy and star anise, Peking duck.

Production Method
Manual harvest; fermentation in vats; malolactic in vats and barrels (approx. 2/3 vats, 1/3 barrels); aged ~12 months in once-used (one-year-old) oak barrels.
