Tasting Note

Ripe apple, citrus and stone-fruit core with hazelnut/toasty richness, saline minerality and a touch of reductive smoke. Medium-full, broad palate with lively acidity, creamy lees texture and a long, savory finish.

Western: roast chicken, seared scallops, lobster with butter sauce, mushroom risotto, aged Comté or Parmesan. Asian: sushi/sashimi, tempura, miso-glazed cod, Cantonese steamed fish, mild Thai coconut fish curry.


Production Method

Hand-harvested Chardonnay; fermented and aged in French oak barrels (approx. 15–20% new) for ~11–12 months with lees ageing and completed malolactic fermentation to build texture.
