Tasting Note
Perfumed Chardonnay with lime, tangerine, white flowers, pear and subtle peach. Medium–full-bodied with saline mineral backbone, crisp acidity, light oak spice and honeyed notes, finishing long and slightly austere.
Food Pairing
Western: oysters, scallops, grilled/roast chicken, creamy seafood pasta, pork with apples. Asian: miso-glazed cod, sushi/sashimi, tempura prawns, lighter Thai or Vietnamese seafood dishes.
Production Method
Hand-harvested fruit; indigenous-yeast fermentation (≈3 weeks) in stainless steel; aged 12–15 months mainly in 22hL foudres and 600L barrels (≈15% new oak); biodynamic viticulture and lees ageing.

Domaine Etienne Sauzet of Puligny-Montrachet, now run by Emilie Boudot and Benoît Riffault. Historic family domaine, biodynamic farming since c.2009, renowned for precise Puligny Chardonnay and holdings in Puligny and the Hautes-Côtes.
