Tasting Note

White-peach, green apple and lemon-blossom fruit with crushed-stone minerality, saline tension, toasted hazelnut and ginger/lemongrass spice; very focused, luminous acidity and a long, saline finish.


Food Pairing

Western: lobster Thermidor, roasted chicken with butter sauce, creamy mushroom pasta, aged Comté. Asian: miso-glazed black cod, tempura prawns, Cantonese steamed fish with ginger/scallion, mild Thai coconut curry.


Production Method

Hand-harvested Chardonnay; whole-berry press, barrel fermentation with a portion of new oak (c.20–40%), aged on fine lees for several months; domaine farms organically and biodynamically.

Domaine Etienne Sauzet, founded early 20th century in Puligny-Montrachet; run by Emilie Boudot and Benoît Riffault today. The domaine owns small parcels including c.0.14 ha in Bâtard-Montrachet; organic since 2006, biodynamic since 2010 (cert. 2013).
