Tasting Note
Aromas of crushed nuts, white flowers, green apple, white pineapple, yellow peach and grapefruit pith with saline, herbal and flint notes. Creamy, pillowy texture, bright juicy acidity and a long saline-tinged finish.
Food Pairing
Western: roast chicken, creamy seafood risotto, lobster with butter, grilled scallops, pork loin with herbs. Asian: miso-glazed cod, seared scallops with soy-citrus, sushi/sashimi (fatty tuna), mild Thai green curry, teriyaki chicken.
Production Method
Full-press, cold-settled and pressed straight to barrel; fermented on full solids in French barriques (50% new); ~20% underwent natural malolactic; élevage ~11 months.

Inaugural Margaret River Chardonnay from E.J. McDougall’s négociant-éleveur project; fruit sourced from a south Margaret River vineyard (Wallcliffe), planted 1996; relaunch led by Edward & Lilian McDougall.
