Tasting Note
Aromatic wild strawberry, blood orange, thyme and cedar with raspberry and savory conifer. Silky, layered mid‑palate flowing to tart hibiscus, ripe raspberry and a lingering finish of black tea and Asian spice.

Western: roast duck, mushroom risotto, pork tenderloin, grilled salmon, mushroom‑based dishes, aged cheeses. Asian: Peking duck, miso‑glazed black cod, teriyaki salmon, char siu, shiitake ramen, Korean BBQ (pork/duck).

Production Method
Organically farmed, non‑irrigated; ~1/3 whole‑cluster fermentation; aged 15 months in 40% new French oak (Tonnellerie Mercurey).
