Tasting Note
Aromas of black raspberry, cassis and black cherry with dried tobacco, rosehip and orange zest; vibrant acidity, round tannins and a long, floral-tinged finish (elegant, concentrated and age-worthy).
Food Pairing
Roasted duck, mushroom risotto, grilled salmon, pork belly, charcuterie and soft cheeses; Asian pairings: miso-glazed black cod, Korean BBQ pork, mushroom udon, soy-ginger salmon, and earthy Chinese braises.
Production Method
100% Wildrose Estate fruit; fermented from Dijon 115 & 777 clones and aged ~15 months in 45% new French oak (Tonnellerie Mercurey). Bottled unfiltered; small production single-vineyard Pinot.
Vineyard Info
DuMOL planted Wildrose in 1999; small, high-density single-vineyard bottlings led by Andy Smith. Wine is a core estate single-vineyard offering with organic/dry-farming practices noted on later releases.
