Tasting Note
Deeply aromatic coastal Pinot Noir with Asian spice, soy and bouillon notes; hibiscus, lilac and orange-zest lift. Sleek red and black fruit, tangy core, lacy texture and silky featherweight tannins. Lively acidity and a long, mineral-flecked finish with mint, tobacco and apple-skin edges.
Food Pairing
Western: roasted duck, mushroom risotto, pork tenderloin, grilled salmon, mushroom tart. Asian: miso-glazed black cod, soy-braised mushrooms, duck bao, teriyaki salmon, pork ramen, Korean bulgogi.
Production Method
Hand-harvested, small-lot fermentations with gentle extraction; aged 15 months in French oak (30% new, Tonnellerie Chassin).
