Tasting Note
Perfumed and focused Pinot: dark cherry, black raspberry, rose petal, cardamom and forest-floor notes with graphite and cedar. Silky mid-weight palate, sappy fruit, bright acidity, grainy tannins and a very long mineral finish.
Food Pairing
Western: roast duck, mushroom risotto, pork tenderloin, grilled salmon. Asian: miso-glazed black cod, Peking duck, char siu pork, shiitake gyoza or soba with mushrooms.
Production Method
Hand-harvested fruit (Dutton Jentoft Vineyard); mostly destemmed, small-lot fermentations, aged ~15 months in ~45% new French oak (Remond & Chassin); bottled with minimal filtration.
